Snow Day Tomato Soup!
We had a wonderful Snow Day with the Saints this past Sunday. We served almost 100 grilled cheese sandwiches and a giant pot of homemade tomato soup. Many asked for the recipe for this delicious and easy dump recipe so here it is! It’s even perfect for a Lenten Friday!
Creamy Tomato Soup
- 2 tablespoons butter 
- 1 medium onion, finely chopped 
- 2 cloves garlic, minced 
- 1 tablespoon dried basil 
- 8 ounces cream cheese 
- 1¼ cup milk 
- 2 cans condensed tomato soup 
- 2 cans diced tomatoes 
- 15 ounces tomato sauce 
- ½ teaspoon pepper 
- ½ teaspoon salt 
INSTRUCTIONS
- In a large pot sauté the chopped onions and minced garlic with butter over medium heat. 
- When translucent add basil and cream cheese to the pot. Break up the cream cheese and add milk. Heat until cream cheese is melted and mixture is warm. 
- Stir mixture in pot and add cans of tomato soup, diced tomatoes, tomato sauce, salt and pepper. 
- Stir ingredients together. Using an immersion blender blend together all the ingredients till a desired smooth consistency is reached. 
- Allow soup to simmer for 15 minutes before serving.
